Salmon certainly doesn't come first in my list of favourite fish and i think the main reason was always the fact that nobody;including me,had ever prepared it they way it's supposed to be.Well today that changed forever.This is the marinade that is responsible for transforming this fatty and heavy tasting fish into an light lunch delight.

The best Grilled Salmon


Lemon Juice
Lemon Zest
Orange Zest
Good Olive Oil
Fresh Basil Leaves
Fresh Ground Pepper
A bit of good Greek Ouzo

The trick is to turn the Salmon a few times in the mixture so it gets a bit cooked by the acids of the lemon juice a bit and get all from the flavors.Don't leave the salmon in there too long as it will start crumbling into pieces and it wont even make it one the grill.Be sure to add the salt and pepper on both sides of the fish after you take it off the marinade.Cook on a non sticky grill until it gets a nice color.Treat the fish with kindness and don't overcook it!I have start getting obsessive with overcooked meat.
